Wasted! Screening, Sustainable Soiree, and Chef Event
Join us for a very special Earth Day tasting event featuring delicious and sustainable food and drink from Preux and Proper, Vaka Burgers, LA Kitchen, and more. View a screening of the thought-provoking documentary, Wasted! The Story of Food Waste, followed by a panel discussion with acclaimed chefs Neal Frasier of Redbird, Nyesha Arrington of NATIVE, Michael Cimarusti of Providence, and Minh Phan of Porridge + Puffs. After the discussion, enjoy an enlightening reception with inventive dishes that highlight delicious and underutilized ingredients.

Through the eyes of well-known chefs like Anthony Bourdain, Dan Barber, Massimo Bottura, Mario Batali, and Danny Bowien, see how the world's most influential chefs make the most out of every kind of food, transforming what most people consider scraps into incredible dishes that create a more secure food system. WASTED! exposes the many factors contributing to food waste, how it's directly affecting climate change, and how each of us can make small changes (all of them delicious) to solve one of the greatest problems of the 21st Century.

About The Panelists
Neal Fraser is chef and owner of multiple restaurant concepts in Los Angeles. Currently, he and his business partner/wife Amy Knoll Fraser own and operate critically acclaimed Redbird; high-volume special events and performing arts venue Vibiana; fast-casual Fritzi Coop at both Arts District Brewing Company and in the Farmers Market at the Grove. His restaurant has received many accolades including a coveted spot on the Los Angeles Times Gold List by Jonathan Gold and Los Angeles Magazines Best New Restaurants list.
 

Chef and partner of NATIVE in Santa Monica, Nyesha Arrington, was named a "Rising Star" by Brad Johnson, restaurant critic of Angeleno. In 2012, Arrington was recognized by Zagat in their "30 Under 30" list. Nyesha has also appeared on popular reality cooking shows, including Bravo TV's Top Chef, Esquire Network's Knife Fight, and Food Network's series Chef Hunter. We as chefs can really choose local, bio-intensive and regenerative and really make a difference, says Nyesha.
 

At his highly acclaimed Los Angeles restaurant, Providence, Co-owner and Chef Michael Cimarusti has created elegant and contemporary seafood-centric cuisine for over a decade. The chef and the restaurant have earned national accolades that include several James Beard Award nominations and two highly coveted Michelin stars. He combines his extensive knowledge and appreciation for seafood, with an advocacy for sustainable fishing practices that is evident in each dish he creates. He says, "It is my duty to staunchly support [seafood] conservation and best practices, and it's my privilege to have the opportunity to showcase it on a nightly basis."


Minh Phan is the chef-owner of porridge + puffs, a grain and stock exploratory project she started at her restaurant Field Trip. Using Koda Farms' Organic Kokuho Rose Heirloom Rice (grown in California) as a canvas, foundation and vehicle, market ingredients are thoughtfully and delicately pickled, fermented, cooked, and layered. As an antidote to her fine dining background and the continual use of a chinois and straining, she consciously practices, less straining in hopes of using all parts, no waste. Phan is busy, spending time with her community organization partnerships (Food Forward, The Hollywood Orchard, Muir Ranch, SEE-LA, Culinary Corps) and gearing up to open her new brick and mortar, slated for late Spring 2018.
